Baking A Lemon Cak

One of my favourite cakes to bake has to be a lemon bake due to its simplicity. I have been baking lemon cakes for a very long time and I can officially recite the whole recipe any day. I love baking so much, so in spirit of the GBBO season and my love for it, I thought I'd share with you my favourite recipe.

You will need:

A large bowl

A wooden spoon/hand held mixer/KitchenAid

170g of butter

170g of self-rasing flour 

170g caster sugar

1 tsp baking powder

Zest of 2 lemons

3 eggs

A loaf baking tin


Greasproof your baking tin by greasing your tin with butter and putting the baking parchment in the tin.

Preheat your oven to Gas Mark 5

In a large bowl add the 3 eggs, sieve in the flour, caster sugar, butter, zest of two lemons and the baking powder.

Mix together until creamy and pale

In your baking tin, put the creamy mixture in and bake in the oven for 30-40 minutes or until golden. 

To check whether or your cake is done, put a skewer in several places and if clean, your cake is done.

Make sure that you don't take out your cake until time is done otherwise your cake will sink.
